This hearty and savory cheesy beef and vegetable pie is the perfect comfort food. The flaky pie crust is filled with seasoned ground beef, and vegetables, and topped with a generous layer of melted cheese. It’s a deliciously satisfying meal that can be served for lunch, dinner, or even as a savory breakfast.
Ingredients:
1 pre-made pie crust (or homemade)
1 lb (450g) ground beef
1 onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
1 cup shredded carrots
1 cup potatoes, grated or thinly sliced
1 cup cheddar cheese, shredded
½ cup mozzarella cheese, shredded
2 eggs
½ cup milk or cream
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon dried oregano
Salt and pepper to taste
Fresh thyme (optional, for garnish)
Instructions:
Prepare the Crust: Preheat the oven to 375°F (190°C). Roll out your pie crust and place it into a pie dish, pressing it into the edges. Trim off any excess crust, then prick the bottom with a fork. Bake the pie crust for 8–10 minutes, or until lightly golden.
Cook the Beef Filling: In a skillet, heat olive oil over medium heat. Add the chopped onions and garlic, and sauté until softened. Add the ground beef and cook until browned, breaking it apart with a spatula. Stir in the bell pepper, carrots, and grated potatoes. Cook for 5–7 minutes until the vegetables are softened. Season with paprika, oregano, salt, and pepper. Remove from heat and let it cool slightly.
Prepare the Egg Mixture: In a small bowl, whisk together the eggs and milk or cream. Set aside.
Assemble the Pie: Spread the beef and vegetable mixture evenly over the pre-baked pie crust. Sprinkle the shredded cheddar and mozzarella cheese on top of the beef mixture. Pour the egg mixture over the filling, ensuring it covers everything.
Bake: Place the pie in the oven and bake for 25–30 minutes, or until the cheese is bubbly and golden brown on top, and the filling is set.
Serve: Remove the pie from the oven and allow it to cool slightly before slicing. Garnish with fresh thyme, if desired, and serve warm.
