Classic Snowball Cookies


Introduction: These Snowball Cookies, also known as Russian Tea Cakes or Mexican Wedding Cookies, are buttery, nutty, and melt-in-your-mouth delicious. Rolled in powdered sugar, they resemble little snowballs, making them perfect for the holiday season or any time you’re craving a sweet, nutty treat.

Recipe:

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar (plus extra for rolling)
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped nuts (walnuts, pecans, or almonds work well)
  • 1/4 tsp salt

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Make the Dough:
  • In a large bowl, beat the softened butter and powdered sugar until light and fluffy.
  • Add the vanilla extract and mix until combined.
  • Gradually add the flour and salt, mixing until just incorporated.
  • Fold in the chopped nuts until evenly distributed.
  1. Shape the Cookies: Roll the dough into 1-inch balls and place them about an inch apart on the prepared baking sheet.
  2. Bake: Bake for 12-15 minutes, or until the bottoms are lightly golden. Be careful not to overbake; the cookies should not be browned on top.
  3. Roll in Powdered Sugar: Let the cookies cool slightly (but still warm) and roll them in powdered sugar. After they’ve cooled completely, roll them in powdered sugar again for a thick, snowy coating.
  4. Serve and Enjoy: These cookies are ready to serve immediately or can be stored in an airtight container for up to a week.
