Butterscotch Cream Pie Recipe

Ingredients:

For the Crust:

  • 1 ½ cups of graham cracker crumbs or crushed vanilla wafers
  • ⅓ cup melted butter
  • 2 tbsp sugar

For the Butterscotch Filling:

  • 1 cup brown sugar
  • ¼ cup cornstarch
  • ½ tsp salt
  • 3 cups whole milk
  • 4 large egg yolks
  • 3 tbsp butter
  • 1 tbsp vanilla extract

For the Whipped Cream Topping:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions:

  1. Prepare the Crust:
  • Preheat your oven to 350°F (175°C).
  • Combine graham cracker crumbs, melted butter, and sugar in a medium bowl.
  • Press the mixture into a 9-inch pie pan to form a crust. Bake for 8-10 minutes, then let it cool completely.
  1. Make the Butterscotch Filling:
  • In a medium saucepan, whisk together brown sugar, cornstarch, and salt.
  • Gradually add the milk, whisking constantly to prevent lumps.
  • Cook over medium heat, stirring until the mixture thickens and comes to a gentle boil. Let it boil for 1 minute.
  • In a separate bowl, whisk the egg yolks. Gradually add a bit of the hot milk mixture to the yolks, whisking constantly, then pour the yolk mixture back into the saucepan.
  • Continue cooking for another 2 minutes, until the filling is thick and smooth.
  • Remove from heat, and stir in the butter and vanilla until fully incorporated.
  • Pour the filling into the prepared crust. Cover with plastic wrap directly on the surface and refrigerate for at least 4 hours, or until set.
  1. Prepare the Whipped Cream Topping:
  • In a cold mixing bowl, combine heavy whipping cream, powdered sugar, and vanilla.
  • Beat until soft peaks form.
  1. Assemble the Pie:
  • Spread or pipe the whipped cream onto the chilled butterscotch filling.
  • Optionally, garnish with extra crumbs or a drizzle of butterscotch sauce.
