1 cup (200g) granulated sugar
1/2 cup (120ml) sour cream
1 tsp vanilla extract
3 large eggs
1/4 cup (30g) cocoa powder
1/2 cup (90g) semi-sweet chocolate chips, melted

2 cups (300g) fresh strawberries, hulled and sliced
1/4 cup (50g) granulated sugar
1 tbsp lemon juice
1 tbsp cornstarch mixed with 2 tbsp water
Garnish:
Fresh strawberries

Instructions
1. Prepare the Crust:
Preheat your oven to 350°F (175°C).
Mix the chocolate cookie crumbs and melted butter in a bowl until combined.
Press the mixture evenly into the bottom of a 9-inch springform pan.
Bake for 8–10 minutes, then let it cool.
2. Make the Cheesecake Filling:
In a large mixing bowl, beat the cream cheese and sugar until smooth.
Add the sour cream and vanilla, mixing until combined.
