Sweet Potato Pie


 Ingredients:


2 cups mashed sweet potatoes (baked preferred)

½ stick margarine, melted

1 cup sugar

3 eggs

1 (4 oz) box vanilla instant pudding mix

½ cup milk (Carnation or similar)

1 teaspoon vanilla extract

2 unbaked pie shells (not deep dish)

Instructions:


Step 1: Prepare the Filling


In a large mixing bowl, combine the mashed sweet potatoes, melted margarine, sugar, eggs, vanilla instant pudding mix, milk, and vanilla extract.

Mix until smooth and well combined.

Step 2: Assemble the Pies


Pour the sweet potato mixture evenly into the two unbaked pie shells.

Step 3: Bake


Preheat your oven to 425°F (220°C).

Bake the pies for 15 minutes at 425°F.

Reduce the oven temperature to 350°F (175°C) and continue baking for an additional 45 minutes, or until the filling is set and the crust is golden.

Step 4: Cool and Serve


Allow the pies to cool before slicing.
