7 Up Pound Cake

Ingredients:


For the Cake:


3 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

1 ½ cups unsalted butter, softened

3 cups granulated sugar

5 large eggs

1 tablespoon vanilla extract

1 tablespoon lemon zest

¾ cup 7 Up soda

For the Glaze:


1 cup powdered sugar

2 tablespoons lemon juice

1 tablespoon 7 Up soda

Directions:


Preheat the Oven: Preheat your oven to 325°F (163°C). Grease and flour a 10-inch bundt pan.

Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 3-5 minutes.

Add Eggs and Flavorings: Add eggs one at a time, beating well after each addition. Mix in the vanilla extract and lemon zest.

Incorporate the 7 Up: Alternate adding the flour mixture and 7 Up soda, starting and ending with the flour. Mix until just combined.

Bake the Cake: Pour the batter into the prepared bundt pan. Bake for 60-75 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cake: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Make the Glaze: In a small bowl, whisk together powdered sugar, lemon juice, and 7 Up soda until smooth.

Glaze and Serve: Drizzle the glaze over the cooled cake. Slice and enjoy!
