Easy Mexican Street Corn

 Ingredients


* 4 ears of corn

* ¼ cup of Crema Mexican Agria Sour Cream (regular sour cream will work as well)

* ¼ cup of mayonnaise

* ½ cup of Cotija cheese, crumbled

* 2 cloves of garlic, crushed (or finely minced)

* ¼ teaspoon of fine sea salt

* Juice and zest of 1 lime

* 1/4 cup of Cilantro, finely chopped

* ½ teaspoon of chipotle chili powder



Instructions


* Heat your grill to roughly 400 degrees F.


* You can grill the corn with the husks on or off. I took the husks off to ensure that I got some nice grill marks on the corn and because I feel like it gives it a nice grilled flavor. FOR HUSKS ON: let your corn soak in water for 10 minutes before grilling. FOR HUSKS OFF: lightly spray spray each cob with cooking spray.**



* Place the corn on the grill and grill for roughly 12 minutes, turning the cobs 1/4 turn every 3 minutes.



* Mix the topping sauce by stirring together the Cacique® Crema Mexican Agria Sour Cream, mayonnaise, cotija cheese, garlic, lime zest and juice, and cilantro.



* Generously top each corn cob with the cheese mixture, sprinkle with a bit of chipotle chili powder, and top with a bit of extra cotija cheese and cilantro.

Loaded Potato & Meatloaf Casserole

For the Meatloaf:


 


1.5 pounds ground beef


 


1 onion, finely chopped



 


2 cloves garlic, minced


 


1/2 cup breadcrumbs

1 egg

Directions:


 


Preheat oven to 375°F (190°C).



 


In a bowl, combine ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper. Press the mixture into the bottom of a greased baking dish.



 


Spread ketchup over the top of the meatloaf.


 


Bake for 25 minutes.


 


Meanwhile, boil the sliced potatoes until tender, about 15 minutes. Drain and mash with sour cream, milk, and butter. Season with salt and pepper.



 


Spread the mashed potatoes over the partially cooked meatloaf. Sprinkle with cheddar cheese and green onions.



 


Return to the oven and bake for another 20 minutes, or until the cheese is melted and bubbly.

For the cream filling:

▢5 Tablespoons all-purpose flour

▢1 cup milk

▢1 cup unsalted butter softened

▢1 cup granulated sugar

For the ganache:

▢1 bag semi-sweet chocolate morsels 12 ounce

▢1 ¼ cup heavy whipping cream

Instructions

For the cake:

Spray two 9-inch cake pans with baking spray. Set aside. Preheat oven to 350°F.

In a bowl, combine the flour, cocoa, salt, baking soda and baking powder. Set aside.

In a measuring cup, combine cooled coffee with milk*. Set aside.

In a large mixing bowl, beat butter and sugar for 5 minutes with an electric mixer. Beat in eggs, one at a time. Slowly add in dry ingredients and alternate with the coffee/milk mixture (about 3 additions of each).

Once all the ingredients are added, beat cake mixture for about 2-3 minutes until fluffy (scraping down the sides of the bowl as needed).

Divide cake batter into the two cake pans. Bake in oven for 25 minutes. Remove and allow to cool about 10 minutes in pan. Invert on a wire rack and cool completely.

For the cream filling:

In a small saucepan, combine the flour with milk, whisking until lumps removed. Turn on medium heat and continue to whisk until mixture becomes thick, like a pudding.

Remove from heat and stir in vanilla. Cool completely.

In a mixing bowl, combine butter and sugar, beat until light and fluffy (about 4 minutes). Slowly add in the COOLED milk mixture, beating until combined. It may curdle slightly in the beginning, that’s okay, keep beating until it becomes the texture of whipped cream!

For the ganache:

In a glass bowl (safe for the microwave) combine semi sweet chocolate with heavy cream. Heat for 1 minute. Remove from microwave and stir until smooth (you may need to heat for another 15-30 seconds). Do not over heat. Set aside while you begin to assemble the cake.

To assemble:

Place first layer of cooled cake on a cake plate. Top it with ALL of the cream filling. Add the second layer of cake on top.

Slowly pour the ganache over the cake, using an offset spatula to help cover the top and sides. Allow to set, about 15 minutes. Slice and enjoy!

Creamed Chicken and Biscuits Casserole

 Ingredients

1 ½ tsp butter

1 small onion, chopped

2 pounds of cooked chicken, cut or shredded

1 can of cream of chicken soup

½ cup mayonnaise

1 cup of milk

½ cup roasted red pepper, chopped

1 ½ cup cheddar cheese, mild

1 can refrigerated biscuit dough

How To Make Creamed Chicken and Biscuits Casserole

FIRST STEP:

Preheat the oven to 350*


Grease the bottom and the sides of a baking dish


SECOND STEP:

Heat the butter in a skillet and add the onion


Saute until the onion begins to soften


THIRD STEP:

When done add the onion to the chicken, milk, red peppers and mayonnaise


Pour into the prepared baking dish


FOURTH STEP:

Bake for 15 minutes and then remove from the oven


Sprinkle with 1 cup of the cheese and then layer the biscuits over the cheese


FIFTH STEP:

Sprinkle with the remaining cheese


Return the baking dish to the oven and bake for another 20 minutes or until golden brown


SIXTH STEP:

Let sit for a few minutes before serving.


This can be a meal in itself or you could make a dinner salad to go with this dish

– 6 cups cubed day-old bread (such as French bread or challah)

– 2 cups whole milk

– 1/2 cup heavy cream

– 1 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg

 These mini chicken pot  pies are ridiculously easy. Seriously… they only have 6 ingredients! And you can make them from start to finish in about 30 minutes. Serve them with a little side salad and it makes a quick and simple weeknight dinner!


Ingredients

14 ounces Cream of Chicken Soup

¼ cup Chicken Stock

3 packages Crescent Rolls(you will have to seal the seams)

9 ounces frozen mixed vegetables, thawed

1 cup chicken, shredded

How To Make Mini Chicken Pot Pies

Preheat the oven to 400*

Spray muffin tins with a non stick spray

Lay the crescent roll dough out flat, pinch seams together

Using a biscuit cutter, cut out 12 rounds from the dough

Press the dough into the muffin tins, including up the sides

In a large bowl, mix together the soup, thawed vegetables and the shredded chicken

Spoon the filling into each muffin cup, do not overfill

Using a pizza cutter, slice strips of dough and lay across the tops of the muffin cups

Place in the oven and bake for about 18 minutes, until the top and sides are a light golden brown.

If the top begins to brown too quickly, cover with aluminum foil and bake

Let cool and use a knife to loosen from the muffin tins.

For the Filling:

Prep & Preheat:


 


Preheat oven to 350°F (175°C). Line a jelly roll pan (10×15″) with parchment paper and lightly grease it.



 


Make the Batter:


 


Whisk flour, cornstarch, baking powder, and salt.


 


In another bowl, beat eggs and sugar for 5 minutes (yes, 5!) until pale and fluffy. Add vanilla, milk, and food coloring.




 


Gently fold dry ingredients into the egg mix until smooth.


 


Bake:


 


Spread batter evenly in your pan. Bake for 10–12 minutes — it should spring back when touched.



 


Roll it Up:


 


Lay a clean towel flat, dust with powdered sugar. Turn hot cake onto towel, peel off parchment, and roll it up gently (with the towel inside). Let it cool fully.



 


Cream Cheese Filling:


 


Beat cream cheese, butter, powdered sugar, vanilla, and salt until smooth and fluffy.



 


Assemble:


 


Unroll the cake, spread filling evenly, then roll back up (this time without the towel!). Wrap in plastic and chill at least 1 hour.

Triple Crust Peach Cobbler

 Ingredients

3 Packages (11 ounces each) Betty Crocker™️ pie crust mix

1 cold water cup

1 1/2 sugar cups

3/4 cup melted butter or ghee

2 teaspoons ground nutmeg

2 teaspoon ground cinnamon

2 Vanilla teaspoons

2 Small spoons of lemon extract

2 cans (29 ounces each) chopped peaches in syrup, undrained

How To Make Triple Crust Peach Cobbler

Heat oven to 350 degrees Fahrenheit. Stir one package of pie crust mixture and 1/3 cup of cold water until the mixture forms a ball. Flatten the ball into a rectangle, 11×8 inches. Cutting TO 4 strips, 11 by 2 inches every . Placing strips on an un-greased cookie sheet; Baking 17 min . Sit apart .

Stir one package of pie crust mixture and 1/3 cup of cold water until the mixture forms a ball. Flatten the roll ball to fit the bottom and sides of an un-greased rectangular baking dish, 13 x 9 x 2 inches. Put in a plate and set aside.

Stirring sugar, nutmeg,butter , cinnamon, vanilla, lemon extract, and peaches together in a large bowl. Cast semi of the mixture to the baking plate . Arrange 4 pastry slices on top. Pour rest half of the peach mixture on the top.

 Amish Hamburger Steak Bake


Ingredients:


1 1/2 lbs ground beef

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

2 cups milk, divided

1/4 cup all-purpose flour

4-5 medium russet potatoes, thinly sliced

1 medium onion, thinly sliced

1 cup shredded cheddar  cheeseMashed potato cooking utensils



Instructions:


Preheat oven to 375°F and grease a 9×13 baking dish.
