3 Tbsp light butter, divided. I use Land o’ Lakes light butter made with canola oil

3 cups rotisserie chicken (without skin) or cooked chicken shredded or cubed 

1 onion, diced

4 celery stalks, finely chopped 

1 cup carrots, finely chopped 

5 cloves garlic, minced

1/3 cup all-purpose flour

2 1/2 cups small gold or Yukon potatoes, chopped into ½” inch pieces

4 cups low sodium chicken broth

2 1/2 tsp chicken bouillon 

1/4 tsp black pepper

1/2 tsp salt 

1/4 cup parsley, finely chopped

1/2 tsp dried oregano

1/2 tsp dried basil

1 Tbsp fresh thyme or 1/2 tsp dried thyme

1/4 tsp dried sage

1 bay leaf

2 cups fat free half and half or unsweetened almond milk or skim milk. I use land o lakes fat free half as half for more creaminess

2 Tbsp cornstarch

1 cup frozen peas, not thawed

 Melt in Your Mouth Chicken is a classic recipe that’s been around for ages. Its origins are unclear, but I’m glad whoever came up with it did. 


The idea of topping chicken breast with mayo and parmesan is pure genius! The mixture turns beautifully golden post-baking, and it smells phenomenal, too. 


The flavor is so rich, so creamy, and so addictive! 


More importantly… OMG… the chicken is insanely tender and moist! That’s something that’s hard to come by with baked chicken breast. 



Best of all, this recipe is impossible to mess up. Even if you’re a newbie in the kitchen, you can easily pull it off.


If you’re looking for a dish to shock and impress your family and friends, this is the one.


It all started when I was making my meal menu/grocery list for the week, I have a set of “go-to” meals that could be made quickly with minimum effort and planning, but there I was… stuck!

How To Make Stuffed Pepper Casserole

In a large skillet cook the ground beef, breaking apart. Once it is mostly cooked add in the onions and bell peppers and cook for 5-10 minutes until they start to soften.

Add the garlic to the beef mixture and cook for a minute or two, just until you can start to smell it.

Sit in the rest of the ingredients, except the cheese, and bring the mixture to a boil.

Cover and reduce the heat to a simmer and cook for about 20 minutes, stirring half way through.

Once the rice is tender, stir in about 1/2 of the cheese until it is melted and incorporated with the beef and rice.

Sprinkle the rest of the cheese over the top, put the lid back on the pan and let the cheese melt. If you are in a hurry, you could put your pan under the broiler (if it is oven safe) to melt it faster.

Instructions:

Prep Oven & Sear Steak: Preheat your oven to 325°F (165°C). In a small bowl, combine the ¼ cup all-purpose flour, ½ teaspoon salt, ¼ teaspoon black pepper, and 1 teaspoon garlic powder. Dredge the 2 lbs of steak in this flour mixture to coat it completely. In a large oven-safe pot or Dutch oven, heat the ¼ cup vegetable oil over medium-high heat. Brown the coated steaks on both sides, then remove them from the pot and set them aside.

Sauté Vegetables & Build Sauce: In the same pot, add the 1 diced onion, 1–2 diced celery stalks, 1 thinly sliced green bell pepper, and 8 oz of sliced mushrooms. Sauté until they begin to soften. Add the 2 minced garlic cloves and 3 tablespoons tomato paste, and cook for another 1–2 minutes until fragrant. Stir in the 1 (15 oz) can of diced tomatoes, 2 cups beef broth, 1 tablespoon Worcestershire sauce, ½ teaspoon dried thyme, 1 teaspoon sugar, and a pinch of celery seed if you are using it. Return the browned steaks to the pot, making sure they are submerged in the sauce.

Bake: Cover the pot and bake for 1 ½ to 2 hours, or until the steak is fork-tender.

Finish & Serve: If you desire a thicker gravy, mix the 2 tablespoons of cornstarch with 2 tablespoons of water in a small bowl to create a slurry. Stir this slurry into the pot and simmer on the stovetop until the gravy has thickened. Serve the Swiss steak hot over mashed potatoes, egg noodles, or rice.

Note: For a slow cooker version, reduce the beef broth to 1 cup and cook on low for 6–8 hours

 Homemade Tapioca Pudding – Of all the types of  pudding out there, tapioca might just be the most controversial. Some people love it and some people can’t even stand the sight of it. Maybe it’s because I grew up with the homemade version, but I absolutely fall into the “love it” category. It’s a classic dessert that’s  creamy, sweet, and satisfying. The first bite never fails to bring back happy childhood memories.


While you don’t see folks making it as often these days, I strongly believe that homemade is the only way to go. The store bought pudding just doesn’t hold a candle to the creamy goodness of homemade. Luckily, it’s quite easy to make!


Ingredients

½ cup small pearl tapioca

4 cups milk, whole or 2%

¾ cup white sugar

3 eggs

¾ cup white sugar, additional

1 teaspoon vanilla

How To Make Homemade Tapioca Pudding

Rinse tapioca pearls and then pour into a small bowl and cover with water. Let soak 45-60 minutes.

Add milk and first ¾ cup of sugar to a large saucepan. Bring mixture to a simmer over medium heat. Once small bubbles form, add the tapioca pearls and reduce heat to a gentle simmer. Stir frequently and cook for 15-20 more minutes or until pearls become translucent.

As pearls cook, beat together the eggs and remaining ¾ cup sugar in a medium size bowl.

Slowly pour a stream of the hot mixture into the eggs about a ⅓ cup at a time, stirring constantly. Continue until half the hot mixture has been beaten into the eggs.

Slowly pour the contents of the egg bowl back into the saucepan, continuously stirring.

Cook for an additional 3-5 minutes or until the pudding starts to thicken (it will continue to thicken as it cools as well).

Remove from heat and stir in vanilla. Transfer to serving dishes and chill until serving.

GERMANE Chocolaté Cheet Cake

 German Chocolate Sheet Cake has been a favorite dessert in my family for as long as I can remember. My dad requests it for every birthday and my grandmother’s famous recipe is safely stowed in every family member’s recipe box. Because my dad’s side of the family does in fact hail from Germany, I never questioned the assumption that German Chocolate Cake was, well… German. So, you can imagine my surprise when I learned that was not the case!


German Chocolate Sheet Cake

2 cups all purpose flour

2 cups white sugar

¼ cup cocoa powder

1 cup water

½ cup butter (1 stick)

½ cup shortening

4 oz German baking chocolate

½ cup buttermilk

1 teaspoon baking soda

½ teaspoon salt

2 eggs

1 teaspoon vanilla

FROSTING

12 oz can evaporated milk

3 egg yolks

¾ cup butter

1 cup sugar

1/2 cup brown sugar

1 ½ cups shredded coconut

1 ½ cups pecans, roughly chopped

1 ½ teaspoons vanilla

How To Make German Chocolate Sheet Cake

Preheat oven to 400 degrees F and grease a sheet pan.

In a large bowl, mix together the flour, sugar, and cocoa powder.

In a small saucepan, add the water, butter, shortening, and chocolate. Bring to a boil over medium heat. Once the mixture is smooth and fully combined, add it to the dry ingredients and whisk to combine.

Stirring between each addition, first add the buttermilk, baking soda, salt, eggs, and then vanilla.

Transfer batter to the prepared sheet pan and bake for 20-22 minutes. Let cool before frosting.

FROSTING

Add the milk, egg yolks, butter, and sugars to a medium sized saucepan over medium heat. Bring mixture to a boil and then lower heat to a simmer. Stir frequently and continue cooking for 10-12 minutes or until mixture has thickened. Remove from heat.

Stir in coconut, pecan, and vanilla.

Let frosting cool slightly and then spread over the cooled cake.

Chill for 1-2 hours, then serve.

Pineapple Cowboy Candy

•3 cups diced fresh pineapple


•1 cup thinly sliced jalapeño peppers

1. Make the Syrup:

•Before storing, check that the jars have sealed properly by pressing down on the center of each lid (it should not pop back).
