4 bone-in pork chops (about 1-inch thick)


4 medium potatoes, thinly sliced


1 tbsp olive oil


Salt & black pepper, to taste


1 tsp paprika


1 tsp garlic powder


1 tsp onion powder


For the creamy sauce:


2 tbsp butter


2 tbsp all-purpose flour


2 cups chicken broth


1 cup heavy cream (or half-and-half)


1 tsp Dijon mustard


1/2 tsp thyme (dried or fresh)


1/2 cup grated Parmesan cheese

Step-by-Step Instructions

Preheat oven – Set oven to 375°F (190°C). Grease a large baking dish.


Season pork chops – Pat pork chops dry with paper towels. Rub with olive oil, paprika, garlic powder, onion powder, salt, and pepper.

Sear the pork chops – Heat a skillet over medium-high heat. Sear pork chops for 2–3 minutes per side until golden brown. Remove from pan (they will finish cooking in the oven).


Make the creamy sauce – In the same skillet, melt butter. Whisk in flour and cook for 1 minute. Slowly add chicken broth and cream, whisking until smooth. Stir in Dijon mustard, thyme, and Parmesan cheese. Simmer until thickened.
