Ingredients:
2 slices of thick-cut bread (brioche, sourdough, or your favorite)
2 large eggs
4 strips of crispy bacon
2 tablespoons butter
1 slice cheddar cheese
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
½ teaspoon black pepper
½ teaspoon salt
1 teaspoon chives (optional, for garnish)
Directions:
Cook bacon in a skillet over medium heat until crispy. Remove and place on a paper towel to drain excess grease.
In a bowl, whisk eggs with salt and black pepper. Melt 1 tablespoon butter in the skillet and scramble eggs until soft and fluffy. Remove from heat.
Toast the bread slices in the same skillet with 1 tablespoon of butter until golden brown.
Spread mayonnaise and Dijon mustard on one slice of bread.
Layer scrambled eggs, cheddar cheese, and crispy bacon on top.
Place the second slice of bread on top, press gently, and slice in half.
Garnish with chives if desired and serve warm!
