Peach Sponge Cake


 This delicious peach sponge cake combines the light, fluffy texture of a classic sponge cake with the sweet, juicy flavor of peaches. Perfectly moist and topped with powdered sugar, this cake is ideal for summer gatherings, tea time, or a delightful dessert. Ingredients:

  • 2 large eggs
  • 1 cup sugar
  • 1 cup plain yogurt
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • A pinch of salt
  • 3–4 fresh peaches (or canned peaches, drained and sliced)
  • Powdered sugar for dusting

Instructions:

  1. Prepare the Oven: Preheat your oven to 350°F (175°C). Grease and line a rectangular baking pan with parchment paper.
  2. Mix the Wet Ingredients: Whisk together the eggs and sugar until light and fluffy in a large bowl. Add the yogurt, vegetable oil, and vanilla extract, and whisk until well combined.
  3. Combine the Dry Ingredients: In another bowl, sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture, stirring just until combined and smooth.
  4. Add the Peaches: Pour the batter into the prepared baking pan. Evenly arrange the peach slices on top of the batter.
  5. Bake the Cake: Bake in the oven for 30–40 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
  6. Cool and Serve: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Transfer to a cooling rack and allow it to cool completely. Dust with powdered sugar before serving.
