Ingredients:

For the Meatloaf:

1 1/2 pounds ground beef (or a mix of beef, pork, and veal)

1 cup breadcrumbs (plain or seasoned)

1/2 cup whole milk

1 egg, lightly beaten

1 small onion, finely diced

2 garlic cloves, minced

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

For the Glaze (Optional):

2 tablespoons ketchup

1 tablespoon brown sugar

1 teaspoon Dijon mustard

For the Caramelized Onion Gravy:

2 large onions, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

2 tablespoons all-purpose flour

2 cups beef broth

1 tablespoon Worcestershire sauce

Salt and pepper, to taste

Instructions:

Prepare the Meatloaf:

Preheat your oven to 375°F (190°C).

In a large bowl, combine breadcrumbs and milk. Let sit for 5 minutes to absorb.

Add the ground meat, egg, diced onion, garlic, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix gently until just combined; avoid overmixing to keep the meatloaf tender.

Transfer the mixture to a greased loaf pan or shape it into a loaf on a baking sheet.

Add the Glaze:

In a small bowl, mix ketchup, brown sugar, and Dijon mustard. Spread evenly over the top of the meatloaf.

Bake:

Bake the meatloaf for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).

Let it rest for 10 minutes before slicing.

Prepare the Caramelized Onion Gravy:

While the meatloaf is baking, heat butter and olive oil in a skillet over medium heat.

Add sliced onions and cook, stirring occasionally, until golden brown and caramelized (about 20-25 minutes).

Sprinkle in the flour and stir to coat the onions.

Gradually whisk in beef broth, ensuring no lumps. Stir in Worcestershire sauce and season with salt and pepper.

Simmer the gravy for 5-7 minutes until thickened.

Serve:

Slice the meatloaf and serve with a generous drizzle of caramelized onion gravy. Pair with mashed potatoes, roasted vegetables, or your favorite sides.

Enjoy the rich, savory flavors of this upgraded meatloaf for a truly comforting dining experience!
